(makes 8 servings)
- 8 tsp extra virgin olive oil
- 16 tbsp finely chopped onion
- 8 gloves garlic, chopped
- 8 medium carrots, cut in thin diagonal slices
- 8 medium celery stalks, cut into thin diagonal slices
- 4 tsp peeled giner
- 2 cups brocoli florets
- bag of fresh green beans chopped
- 2 cups bok choy
- 8 tbsp green onion
- 8 tsp miso paste (mixed with 16 tbsp hot water)
- heat oil in saucepan over medium-heat
- add onion, garlic, ginger, carrot and celery
- cook and stir frequently for 5 minutes
- add water, cook at a gentle boil on low for 10 minutes or until veggies are tender
- add broccoli, green beans, cabbage and cook until tender-crisp for about 5-7 minutes
- remove from heat
- add sesame oil, green onion and miso, mix well
