Ultimate Reset recipe ~ Quinoa-Lintil Pilaf


Quinoa-Lentil Pilaf
(makes 8 servings)

Ingredients:
  • 12 tsp extra-virgin olive oil
  • 4 medium carrots
  • 4 medium celery
  • 1 medium onion
  • 1 red bell peppers
  • 2 cups cooked lentils
  • 6 cups quinoa
  • 8 tbsp fresh parsley
  • 12 tsp grated lemon peel
  • 12 tsp fresh lemon juice
heat oil in medium saucepan over medium-high heat. Add carrot, celery, onion, bell pepper, onion, bell pepper. Cook and stir frequently for 5 minutes until tender. Add quinnoa, lentils, lemon peel, lemon juice and parsley to cooked vegetables. Heat over medium heat for 2-3 minutes and then fluff with a fork.
